Information about Valrhona chocolate

Valrhona one of the oldest French manufacturers began making chocolate in 1922 in the Rhone Valley and are one of the worlds leading coverture chocolate makers used and much loved by numerous artisan chocolatier’s. Their distinctive black bar wrappers with a bright red triangle logo are recommended by chefs at the top of their profession.

Valrhona source their beans from all over the world they roast these precious beans in small batches which they have carefully blended. Valrhona produce ‘Vintage’ bars which not only denote the country of origin and the name of the plantation which grew the cocoa beans but also, like the wine from their region, the bars are dated with the year of production.

Many recipes state “good quality 70% dark chocolate such as Valrhona’ and that chocolate will be the famous 70% ‘Guanaja’ bar. The bar name of Guanaja is after the Caribbean island of the same name which was discovered by Christopher Columbus in the early 1500’s.

Another bar from Valrhona, the ‘Jivara’ a milk chocolate bar is perfect for chocoholics with a sweeter tooth who have yet to discover the bitter secrets that lie in a bar of 70%.

Recent additions to the Valrhona range of chocolate bars are two Organic and Fairly Traded bars made from specially selected organic cocoa beans. With the name of ‘Cao Grande’ the milk bar has 39% cocoa solids and the very fine dark 70% cocoa solid bar has a distinctive intense flavour.
